Inspired by Lambic Styled fruit beers, this sour cider has been quietly bubbling away for the best part of 2 years. 

Using our 6 month aged barrel apple cider, we added over 100kg of whole raspberries to begin a secondary fermentation. Once the fruit was macerated over friend time, we then allowed the cider to mature unhindered for another 18 months, before blending for balance with some younger cider just before bottling. 

Full of raspberry flavors and sour in style, this cider will suit the more adventurous who like something unique with a strong fruited flavor.
