Limited Release - Bayberry Cider
2024 Bayberry Apple Cider - 750ml 8% ABV.
Locally grown Bayberries were added to our matured apple cider for a prolonged Carbonic Maceration and secondary fermentation of 12 months. This cider drinks like a Sauvignon Blanc - a tart acidity and balanced sweetness, with soft tannins and herbaceous aromatics.
An unusual fruit, Red Bayberry, also known as Yangmei, originates from China. The fruit has a tart flavor, much like a strawberry or raspberry, but their unusual acidic composition includes moderate levels of Gallic Acid, which is typically only found in wines, adding a special complexity to this Limited Release.
